    Meat is essential in human food because it has proteins of high biological value. Therefore, it is necessary to obtain it hygienically, from healthy animals and under veterinary inspection. For this reason, the technological steps in the slaughter of frogs must be well performed, in order to provide the producer with a better yield of the product, and the consumer with safe food.
