    The present work highlights the main quantitative methods of carcass analysis that are correlated with the improvement of qualitative / quantitative aspects of the carcasses as well as greater acceptability by the consumer market, the increase in organoleptic characteristics, such as palatability and juiciness of meat cuts, are directly related, in greater or lesser degree, with the following quantifications: objective measurements of the carcass, thickness of covering fat, rib eye area, PH, texture and colorimetry.

    Análise de algumas variáveis de desempenho e de morfometria em cordeiros da raça Santa Inês criados em regime de confinamento

    The objective of this study was to evaluate some pre-weaning characteristics related to performance and morphometry in Santa Inês breed sheep, reared in a complete confinement regime in the Mantiqueira Paulista region. 59 animals were used, being 31 whole males and 28 females, of the Santa Inês breed, bred and handled in an intensive breeding system. The pre-weaning productive performances observed in this work, when compared to the post-weaning performance reported in the literature, indicate that it will not be difficult to reach the post-weaning performance rates observed in other intensive production systems.

    Efeitos da idade, peso corporal e circunferência escrotal sobre o peso, volume e altura testiculares em cordeiros Santa Inês

    Eighteen Santa Inês lambs were measured for scrotal circumference, which together with age and body weight were correlated with testicular height, volume and weight. The results showed that the correlations that involved age and body weight showed median and low values. However, the correlations with scrotal circumference were high, confirming literature data of the great relationship between this parameter and the development of tissues related to the puberty of male sheep.
